Valentine’s Day: How to have a Beyonce-themed dinner
Anyone who watched Beyonce and Jay-Z’s performance of “Drunk in Love” during the Grammy Awards could feel the love between the two music powerhouses. And now Brucie, a Brooklyn restaurant, is attempting to recreate that lovin’ feeling with an entire Valentine’s Day dinner menu inspired by Beyonce.
So what does a Beyonce Valentine’s Day theme mean? At Brucie, it means deviled bone marrow, jalapeño parpadelle, Negroni short rib, house-blood sausage and more.
“We always try to do something fun here at the restaurant,” said chef Zahra Tangorra. “We are very serious about food and sourcing and cooking and being innovative and interesting, but at the same time, we like to have a good time.”
Tangorra got together with her chef de cuisine and sous chef to think of something fun to do for the holiday.
“We looked at each other and said, ‘How about Beyonce?’ ” said Tangorra. “We can play Jay-Z and Beyonce the whole night and we’ll make a Beyonce-themed menu.”
Each dish on the menu is named after a part of the singer’s life. There’s a dish named after her daughter, Blue Ivy, dishes with the names of her songs, and there’s even one dish named for her and Jay-Z’s 22-day stint as vegans. Tangorra thought of the puns first, then built the menu around the dish names.
Menu highlights include the Blue Ivy, smoked blue potatoes, chiriboga blue, trout roe, watercress; the Surf Board, deviled bone marrow, root vegetables, bone broth bathtub; the Jay Ziti, “carter” cloth-bound cheddar, speck, sweet potato, sage pistu; and the Breastiny’s Child, veal breast braciole, pickled fig, sopresatta and goat yogurt.
Brucie is already completely booked for Valentine’s Day, but Tangorra revealed she’s just added a midnight seating.
“And we will have one special table reserved just in case B herself decided to pop in,” said Tangorra.
