First look at Skyfall, a Vegas bar by L.A. cocktail royalty
Proprietors LLC, the cocktail consultant company that owns Honeycut, the Normandie Club and the Walker Inn in Los Angeles, is bringing its craft cocktails to the Las Vegas Strip.
The company has partnered with the Alain Ducasse team to open Skyfall Lounge, a cocktail lounge adjacent to Ducasse’s riviera-inspired restaurant Rivea, opening atop the Delano Las Vegas in October.
Alex Day, who owns Proprietors LLC with Devon Tarby and David Kaplan, says the menu was inspired by their love af all things French — and a desire to celebrate produce and spirits produced on the West Coast.
Then there’s of course the James Bond influence, with a martini named after author Ian Fleming.
The menu is broken into sections meant to reflect different moods, featuring just over 20 cocktails. There’s the Golden Hour, with cocktails meant to be enjoyed at sunset on the bar’s patio looking out onto the Strip; an effervescent section with drinks that include Champagne or cider; a martini section with various takes on the traditional martini; a section devoted to sour-style cocktails; and a section with new spins on cocktails such as the Negroni and Manhattan.

We got a sneak peek at five of the cocktails, including the Sierra Apertivo, made with Grey Goose Orange and Aperol granita and Alain Ducasse Champagne (it’s a French sunset in a glass); the Climbin’ High with Encanto pisco, Appleton VX rum, raspberries, fresh pineapple and lime juices and Alain Ducasse Champagne; the Lily Pad, made with Bombay dry gin, Chareau aloe liqueur, blanc vermouth, fresh lemon juice, Thai basil and absinthe; the Harvest Moon, made with Rittenhouse rye whiskey, cacoa-nib-infused Clear Creek pear brandy, Avua Ambruana cachaça and Carpano Antica Formula sweet vermouth (cacoa-nib-infused pear brandy works in ways you never imagined); and the Fleming Martini, made with Grey Goose VX, Bombay dry gin and Lillet Blanc.
And just like the group’s Los Angeles and New York City bars, there will be a variety of techniques involved in the Skyfall Lounge drinks, including force carbonation and the use of immersion circulators and sous-vide machines. But don’t be intimidated by what’s going on behind the bar.
“These will be accessible cocktails,” said Day. “There may be ingredients someone hasn’t had before, but they will be presented in a way that is welcoming to everyone.”
In addition to the cocktails, there will be an Old Fashioned service, allowing customers to order any bottle of aged spirit with an Old Fashioned cocktail setup; custom mixers for different spirits (think fresh lime, mint syrup and seltzer with your bottle of gin); and unique spirits such as Chareau Aloe liqueur.
Day plans to have members from the group’s other bars, including Death & Co and One Fifty One in New York City and Honeycut and the Walker Inn stage pop-ups at Skyfall Lounge.
“This is such a unique partnership and there is a lot of energy going into the opening,” Day said. “We’re going to spend a year or so — well, hopefully forever — evolving this program and making it into not only a national but an international cocktail destination.”
