Fried chicken beignets and Champagne at Glazed Donut Bistro, opening Thursday

There’s a new doughnut shop in West Hollywood, but it isn’t exactly serving glazed doughnuts and crullers. At Glazed Donut Bistro, opening Thursday, the shop’s doing sweet and savory fried doughnut concoctions, and even a couple of salads.

On the savory side, the shrimp roll ($14) is a take on the classic New England lobster roll with jumbo shrimp dressed with a tarragon and dill dressing, celery, onion and capers on a Long John doughnut bun; the Missed Piggy ($14) are three pork sliders on doughnut holes with pickled veggies and a bourbon BBQ sauce; and the fried chicken beignets ($10) are three doughnuts filled with chunks of boneless fried chicken served with a maple syrup and vinegar gastrique.

The sweet doughnuts include a selection of cake doughnuts, such as the red velvet ($3) with cream cheese glaze, toasted coconut and red velvet crumb and the carrot cake ($3) with fresh carrots in the dough, a pineapple ginger glaze and candied carrots on top. For the yeast (raised) dougnuts there’s the Mambo Italiano made with house-made ricotta cheese filling, an apple crumb with a Speculoos caramel glaze and apple compote, and a ‘Smores doughnut filled with house-made marshmallow fluff and topped with chocolate ganache, graham cracker streusel and bruleed marshmallow.

And all the doughnuts come with your choice of dipping sauce; there’s raspberry, chocolate sauce and more.

“There are other artisan doughnuts out there,” said owner Harry Ben-Zvi who comes from a background in hospitality in Las Vegas, but “we think of our doughnuts as more of pastries.”

Chef Gena Lora, formerly at Baked in Montrose and an instructor at Le Cordon Blue in Pasadena for 12 years, is the woman behind all the doughnuts at Glazed. She’s making all of the dough from scratch and uses bits of dough from the previous day as a natural conditioner to soften the doughnut dough.

“There’s no preservatives in our doughnuts, so it’s best if they are eaten fresh,” said Lora. Lora and all of her crew wear red or white chef’s coats in the shop’s open kitchen.

And then there’s the alcohol. A full list of white and red wines are available, along with a selection of beer and Champagne. Yes, you can order a bottle of Dom Perignon ($190) to go with your doughnut.

And the entire coffee program was designed by Stumptown Coffee Roasters with baristas trained by the Stumptown crew.

The sign outside says “Opening Valentine’s Day,” but they will be open this week Thursday to Saturday from 6 p.m. to midnight. The store’s regular hours have not been announced.
